There’s her love of red lipstick and cardigan sweaters, her favorite chai spice cookie recipe, lemon blueberry-flavored sourdough, friendship bracelets, emotional devastation set to acoustic guitar. You know, the usuals. But now, thanks to Marcus Mumford and the Dish podcast, we can add a surprisingly humble salad to the list as well.
During a recent appearance on the Dish podcast hosted by Nick Grimshaw and Angela Hartnett, the Mumford & Sons frontman revealed that Swift was such a fan of his signature salad while recording parts of her Evermore album at his home studio during the pandemic that she ended up eating it “almost every night.” In fact, the singer liked it so much that she reportedly gave it an official name: “The Mumford Salad.”

Before we dive into the recipe, let’s go back to the beginning of this story, when Swift stayed with Marcus Mumford and his wife, actor Carey Mulligan, while finishing up her 2020 album, Evermore. According to Mumford, the household was deep in what he jokingly called its “cauliflower era,” with one particular salad making a regular appearance on the couple’s weekly menu.
So what exactly kept the recent Songwriter Hall of Fame inductee coming back for seconds?
The recipe starts with burned cauliflower. Or, “roasted, but pretty much burnt cauliflower,” as Mumford himself worded it. From there, the salad gets topped with pine nuts, feta cheese, and avocado, before it’s served over a bed of spinach and drizzled with a simple balsamic vinaigrette.
OK, technically, that’s more than five ingredients if you include the dressing, but the core salad is remarkably simple. Just five ingredients, one of them nearly burned, and a little dressing. No complicated cooking methods or wildly unobtainable ingredients.
And honestly? It tracks. The best celebrity food revelations are never the extravagant ones. Remember when Ina Garten shared that one of her favorite comfort recipes is microwaved oatmeal?!
Considering the fact that Evermore is by far Swift’s coziest album, it feels fitting that part of its creation was fueled by a warm, charred cauliflower salad eaten around a family table. Perhaps not every era needs a signature cocktail. Sometimes an era is just burned cauliflower, feta, and balsamic vinegar.
