I am a Mexican American, and so many of my strongest connections to my Mexican roots were made around the kitchen table. One memory in particular that has always stuck with me is eating torta ahogada at my Tia Ines’s house in Ixtlan del Rio Nayarit, Mexico. There’s something about a torta completely drenched in sauce, piled with tender pork and tangy onions, that’s simply impossible to forget.
